Biscuit can be divided into soft biscuit and hard biscuit ,according to recipe, process and different molding methods.
For soft biscuit, it can be molded by the rotary molding machine. There is no production of 'cutter scrap' dough.
For hard biscuit, it requires the dough to be laminated and transferred to gauge rollers,when the thick-ness is thin enough to form dough pieces the sheet passes under cutters which make the pieces. These pieces are separated from the surrounding dough (known as cutter scrap) and pass forward to be placed onto the oven band for baking. The cutter scrap is normally returned to the sheeter and reincorporated with fresh dough as the sheet is formed.
For small scale production capacity needs,you can choose a integrated forming machine for soft biscuit and hard biscuit.
For large scale production capacity needs, you can choose separate molding machine for soft biscuit or hard biscuit.
To get a hard biscuit the dough ribbon is formed by using a roller extruder. The formed ribbon pass through a laminator with multiple rolling and resting. To give the dough a layered structure the continuous dough is being laid as an “envelope” at the exit of the laminator. Getting a ribbon of a given thickness with preserving the structure of dough is carried out on a three-modular rolling machine.
Remains of dough ribbon after the forming of dough pieces can be returned for usage and, as a rule, the dough ribbon formed out of them is fed together with the ribbon from the laminator to the rolling machine.
